I had to eat something today and there were no leftovers in the fridge just ready to heat up. So I started grabbing things out of the fridge and throwing them together. It is hard to cook and be busy but I insist on eating tasty things. No fast food for this girl. Off to work I go…
Everything Salad
- Artichoke hearts
- Black olives, halved
- Cherry tomatoes, halved
- Red bell pepper, chopped
- Sweet onion, chopped
- 1/4 roasted chicken breast, chopped
- Garbanzo beans
- Bread cubes, toasted
- Sweet Lime and Sesame Oil Dressing (as the bottom of the post)
Throw all the ingredients together and toss. Enjoy!

The dressing is probably the best part. I love this dressing so much. I have taken to using it on nearly every salad I make.
I would love to eat something just like this every week! It’s the perfect lunch and the easiest way to use up lots of items from previous recipes. I try to add most of the contents of our depleted veggie drawer into a soup on the weekend.
