The Bluegrass region has a lot to offer. The Bourbon Trail. Horse racing. Excellent outdoor activities. And several new breweries in downtown Lexington. My first visit into this district was with friends at Blue Stallion Brewing Co., located off West 3rd Street. During this visit, I drank some tasty beer and ate some amazing things from the Gastro Gnomes food truck. I had a blast and can’t wait to go back again.

JimClemons4_275pxAs I was sipping my Wee Heavy, I was lucky enough to get a brief interview with one of the owners, Jim Clemons. Jim used to be a Chemical Engineer for LexMark but has become one of the lucky few who makes money as he lives his passion. After making beer at home for several years, Jim joined with four other beer enthusiasts to found Blue Stallion, one of the smallest commerical breweries in Kentucky. Jim says his favorite beer is the Pilsner because it reminds him of the time he has spent in Germany. He describes the beer as bitter enough to have character but not overwhelmingly so. It is quite tasty! The full flavor is very enjoyable without being too pushy; sturdy enough to drink alone but also would pair well with most any food. Of the three I tried, it was also my favorite.

BSBC 1According to Jim, the beer at Blue Stallion is “more old world European” than the beer offered at the other Lexington breweries. He describes the beer at Country Boy as “pleasantly cutting edge,” while the beer at West 6th is “more in the modern American style.” Jim speaks very highly of the other breweries and reports that they all share a strong relationship; he says a strong brewery district is good for everyone. Having such a large variety of beer available in Lexington means that there is something for every palate.

The production beer at Blue Stallion Brewing Co. is, at least so far, all vegan, all natural, with no spices, fruit, or herbs. Their beer is made with only grain, hops, and yeast, from the beer’s country of origin.  According to Jim, many breweries use a clean yeast strain from California ; “there isnt’ anything wrong with that, it’s just a little different flavor than what we are going for,” Jim says. Most all Blue Stallion beer is filtered with coarse filter pads, resulting in crystal clear beverages; he says this is just a preference but does not affect the flavor of the beer.

BSBC 3Blue Stallion averages one batch of beer per week ­- that’s 28 kegs of beer. He says they serve half of that beer at their own bar, while bottling and selling the other half to resturants and private citizens by the growler. When I asked what he saw for the brewery in the future, he said he would like to see them increase their production three fold, build a bigger brewery (they have a 15 year lease at their current location, so don’t fear, they won’t be moving any time soon), and to become more production oriented, rather than bar oriented.

BSBC 4But clearly serving their own beer is working well for them now. When I arrived at 530pm, there were about 10 people there already, enjoying a cold one. Several people (including me) were also waiting on the Gastro Gnomes Food Truck to begin serving dinner. Blue Stallion, like the other breweries, allows food trucks to park on their property and conduct business. (Side note: Lexington is working on legislation to allow food trucks in more areas around town. Despite some pushback from traditional resturants, food trucks have become very popular, even though they have to park with permission on private property at this time.) Jim says allowing food trucks is a great way to increase beer sales. He says the more you eat, the more you can drink, the longer you stay. It also is a great draw for the sober driver in the group. Plus, most everyone would agree good food and good beer make for a great night out. There is a rotating collection of food trucks that serve at the brewery. In addition to partnering with food trucks, Blue Stallion has other events nearly every night. Sunday and Monday features reduced pricing on growler fills (that’s a half gallon of deliciousness!). Tuesday night has been dubbed “Test Batch Tuesday.” Jim says beer from tap #4 is usually real good, but occassionally some is not (Hey, it’s experimental !!). Either way, I bet it’s a lot of fun! Wednesday night features live music from local bands. Live Team Trivia is popular on Thursday. If none of these things are appealing, there is a comfortable lounge area with dart boards and a pool table. I can’t imagine how anyone couldn’t have fun at Blue Stallion Brewing Company. I had a blast and can’t wait to go back!

Kentucky IPA

Lexington Brewing and Distilling Company in Lexington KY is the first distillery to be built in Lexington for over 100 years. They make several awesome beverages including Town Branch Bourbon and the Kentucky Ale beers. Their most popular beers in this area include Kentucky Bourbon Barrel Ale and Kentucky Bourbon Barrel Stout. Both are tasty if you like bourbon (the beer is stored in a used bourbon barrel for about 6 weeks). I will try to review them in the future but today I am going to write about the IPA because it is my new favorite beer.

IPA

We first tried this IPA while on a tour of Town Branch (a future post will detail this). We sampled each beer – Kentucky Ale, Kölsch, IPA, Bourbon Barrel Ale, and Bourbon Barrel Stout. Of each, this was my favorite.

The beer itself is a nice clear golden color. with very little head when poured from a bottle. It has 6.5% alcohol by volume and has a lot of carbination. The flavor full of a bright, citrusy flavor and the hops add a dry bitterness that is nice but not overwhelming. For me, this is a nice sipping beer. Not something I would drink tons of in one sitting(not that I ever really over do it on beer anyway). I like it when grilling. My husband thought it was terrible (he hates the “overwhelming” hops flavor). Oh well! MORE FOR ME! hehe

Strawberry Pie

So maybe this pie isn’t the most complex in flavor or preparation technique but it’s my favorite. My grandmother always makes this pie and it reminds me of home every time I take a bite. Every year my grandfather and I try to find fresh local strawberries for this pie. Any of those hydroponic styrofoam impostors will not do. My grandmother would make two of these pies and we would enjoy them with our big family lunch. Anticipation of these meals and the fun time spent laughing around the table is one of my most precious memories. When I go home now, I try my best to be there for all the lunches I can. I know they won’t last forever so I want as many of them as I can.

Strawberry Pie

  • 1 cup sugar
  • 1 1/4 cups water
  • 2 tbsp cornstarch
  • 1 package of strawberry jello
  • 4 cups fresh strawberries, halved
  • 1 9-inch baked pie crust

Bring sugar, water and cornstarch to a boil over medium heat. Cook stirring constantly for 1 minute or until thickened. Stir in strawberry gelatin until dissolved. Remove from heat; chill 2 hours. In a bowl, combine the gelatin mixture with the strawberries. Pour into the pie shell. Cover and chill 2-4 hours. Serve pie with whipped cream if desired.

I am a huge believer in local, free entertainment. National, state, and local parks are great sources of fun and exercise. About 30 miles from our house is a wonderful city park called Raven Run Nature Sanctuary; the 735 acres are dedicated to the enjoyment of nature. The pictures below were taken during a 5.5 mile hike I recently took there.

Appalachian Naturals’ Pomegranate Vinaigrette

This salad dressing is one of my most favorite things in the world! My friend Mary introduced me to this dressing a couple of years ago; she worked part time helping bottle the dressing. I brought some home with me after my visit to Massachusetts (where the dressing is made) and rationed it out over a whole year.

A month ago, I discovered that Whole Foods stocks this dressing. Hallelujah!

I love this dressing on most everything but it is best on mild greens like my black seeded simpson. One of my favorites salads consists of the simpson lettuce, dried cranberries or cherries, feta or goat cheese, sliced green onions, and this vinaigrette. It’s all natural, organic, gluten- free deliciousness. You really should purchase a bottle. I guarantee you won’t regret it! And if you do, you can always mail me your bottle 😉

The Lunch of Champions!

What is the Lunch of Champions you ask? Egg Salad on Wheat with Grippo’s BBQ Chips, of course! Nothing better than this (except maybe bologna on wheat with a big, fresh tomato slice and mayo).

My brother raises chickens for laying and does his best to keep me in stock with eggs. It is amazing how much better fresh eggs really are. They taste and look richer. The yolk is thicker, yellower, and tastier. Want proof? Make German chocolate cake icing with fresh eggs and marvel at the distinct difference.

Eggs salad is like potato salad- the more simple, the better.

Egg Salad (For one or two)

  • 2 eggs (large for two, small for one serving)
  • 1/4 cup mayo
  • 1/4 tsp mustard
  • Salt and pepper to taste

Boil the eggs until hard boiled. Remove from heat and immediately cool with cold water. Crack the eggs and remove the shells. Shells remove better when the eggs are less fresh. (Deviled eggs should NEVER be made with fresh eggs). With fork tines, mash the eggs up. Stir in the mayo, mustard, salt, and pepper. Spread on wheat bread and enjoy!!!
