Blackberry Cobbler

Thanks to my mother and father in law I was able to make a gorgeous blackberry cobbler. If you have never had it, you really should! It is so delicious, especially with wild blackberries. They have a particular tang that just can’t be found in domesticated berries.

When I took the first bite, I was almost unable to speak. The flavor just exploded over my taste buds. This is the essence of all that is good about rural home cooking.

Blackberry Cobbler

  • 1 1/2 cup self rising flour
  • 1 1/2 cup milk
  • 3/4 cup sugar
  • 5 tbsp butter
  • 4 1/2 cups of wild blackberries

Preheat oven to 375 degrees. In a medium saucepan, combine the berries, about 1/2 cup of sugar, and 2 tbsp water. Heat until there are about 5 cups of fruit and juices. Melt butter in a 9×13 glass dish in the oven. In a bowl, combine the flour and sugar. Stir in the milk. Pour batter into the hot butter. Gently spoon the fruit and juices over the batter. Bake for 30 to 35 minutes or until the edges are golden brown. Serve warm and maybe with ice cream. Serves 8.

National Pi Day is a celebration of the Greek letter  “π”, which represents the constant ratio of the circumference of a circle to its diameter — which is approximately 3.14159.

You know you remember this from algebra, right?

Ha…

Truth is, I don’t either.

What I do remember is that I love PIE! Apple, peach, pecan, pumpkin, chocolate, coconut, berry, lemon, lime, custard… You name it, I like it… And I bet you do it. So to celebrate National Pi Day, why don’t you whip up a delicious pie. If you use this recipe, it won’t take much time at all.

A Berry Medley Pie

  • 3 cups mixed berries, fresh or frozen then thawed
  • 2 pre-made pie crusts
  • 2 tbsp corn starch
  • 3/4 cup white sugar

Preheat the oven to 400 degrees. In a small sauce pot, combine the berries, cornstarch, and sugar until well combined.

In a 9 inch glass pie plate, lay out the first pie crust evenly. Pour the warmed berries into the crust. Top the crust as you would desire, using the lattice pattern or laying the second crust over the berries, being sure to cut in some air holes in pretty pattern. Using strips of foil, cover the pie crust edges so they don’t burn. Place in the oven and bake for 30 minutes. Remove the foil and bake another 15 minutes. Allow to cool before cutting. Enjoy!

Is this recipe good when you’re hungry? Check.

Is this recipe good when you are emotionally eating? Check.

Is this recipe good for all those happy things to celebrate? Check. 

Is there anytime this recipe would not be perfection? NO!!! 

This recipe is absolute perfection. It is everything good in the world, baked until warm and gooey. I cannot think of anything that would make this dessert better. Now that I have eaten it, my life is complete. Don’t believe me?! Try it for yourself.

Chocolate Cobbler (thanks to Miss Amy and her grandmother)

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 7 tbsp cocoa powder
  • 1 1/4 cup white sugar
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 1/2 tsp vanilla extract
  • 1/2 cup light brown sugar, lightly packed
  • 1 1/2 cup hot tap water

Preheat oven to 350 degrees. Stir together the flour, baking powder, salt, 3 tablespoons of the cocoa, and 3/4 cup of the white sugar. Stir in the milk, melted butter, and vanilla to the flour mixture. Mix until smooth. Pour the mixture into an ungreased 8-inch baking dish.

In a separate small bowl, mix the remaining white sugar (it should be 1/2 cup), the brown sugar, and remaining 4 tablespoons of cocoa. Sprinkle this mixture evenly over the batter. Pour the hot tap water over all. DO NOT STIR! Bake for about 40 minutes or until the center is set. Allow to sit for 5 minutes before digging in!
