I love good shrimp in the summer. Tasty and light, these skewers are great just as they are or added to salads, pasta, or even on top of nachos…
Garlic and Lime Grilled Shrimp Skewers
- 4 limes, juiced and zested
- 3 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper
- 1 1/2 pounds shrimp, peeled and deveined
- Wooden skewers
In a bowl, combine the shrimp with the lime juice/zest, garlic, olive oil, salt and pepper. Allow the shrimp to marinade for 30 minutes. While they are marinading, soak the wooden skewers in water so they don’t burn when you grill the shrimp. Prepare the grill. When coals are grey, place the skewered shrimp over coals. Grill approx 2 minutes on each side.
This looks wonderful! I’m so glad there’s still summer left so we can try your grilled shrimp recipe. I think my husband and I would love this with a cold beer. š
Oh yes, these are fantastic with beer. My favorite way to eat shrimp is peel and eat with a good beer on tap, outside in the sunshine. MMM!
Scrumptious!
Indeed.
I would eat them as is, hot off the grill. Then I’d burn my tongue and have to save the rest for nachos!
š No burned tongue here… I hate doing that so much! It seems to happen most often with coffee and pizza. Anyway, I hope you try the shrimp.
