For that Easter dinner you are already planning. I just wish my asparagus was producing. Instead it is snowy and in the low 30s. Spring can’t come quick enough!
Oven Roasted Asparagus
- 1 bunch small stemmed asparagus, trimmed and washed
- 3 garlic cloves, microplanced
- Olive oil
- Salt and pepper to taste
Preheat oven to 400 degrees. Place the asparagus on a baking sheet. Drizzle with olive oil and add garlic, salt, and pepper. Toss to cover. Bake for 10 to 12 minutes or until the asparagus is bright green. Serves 3 to 4.

Love asparagus this way! I like them a bit browned, so use 450 or so.
It’s so interesting how people prepare their vegetables. In the North, people like their veggies crunchy. In the South, they cook the heck out of them.
Just made these the other night. I agree with you about spring…it may be here but it doesn’t look like it here. We have so much snow on the ground.
I heard you all got pounded again recently. I bet you all must be thrilled when spring finally arrives. I can’t imagine having such a long winter season. I think I could go crazy!
We got a foot more and it is so cold it isn’t melting much. I want daffodils and warm sunshine or I might go crazy soon. 🙂

One of my favorite ways to prepare asparagus! Here’s to warmer weather in the South…they say it’s on it’s way, but when? 😉
