These potatoes would be best made on the grill but it is too cold and windy for all that today. Instead, I made them in the oven. Of course they weren’t as good but they are still a good, quick side dish. If you have kids, this would be a good recipe for them to help with. Kids should learn about food and it’s preparation so when they are adults they know how to eat flavorful, healthy food. Not food always wrapped in paper.
Bacon Ranch Potatoes
Heavy duty foil
10 baby potatoes, thinly sliced
6 slices of bacon, fried then crumbled
1 packet ranch dressing mix
2 tbsp butter, melted
Create a foil packet. In a bowl, combine the potatoes, bacon crumbles, ranch, and butter. Pour into packet. Bake until tender, about 45 minutes on 400 degrees. (This may be too much time but for some reason my potatoes never seem to cook fast enough.)
The potatoes sound good. You are right, they would be nice cooked in a foil packet on the grill. I’ll remember this for next summer when we are grilling at the cottage in Maine.
A cottage in Maine… sounds so romantic.
It’s tiny and I would say more like fun than romantic. That is where I do all my grilling as most of each day is spent outside.
Question: how would you cook these over a grill? I assume you are referring to a BBQ grill…?
You would put the foil packet on the grill instead of the oven. Sorry I didn’t clarify. I will rectify that shortly.
Got it… Not being a grill master made me wonder if you would put the potatoes in a foil packet as I thought the smoky flavor wouldn’t get in…but I guess it does! Thanks.
Do you not grill much?
Its embarrassing living in SoCal but no, I don’t do it much…mainly because my little ones aren’t too keen on it besides an occasional hamburger. 😉 But I have put tomatoes or onions directly on the grill so that was the true reason for my silly question. 😉
I put onions directly on the grill all the time! And if you slices them thick enough, you could do the same for potatoes. It is a shame you don’t grill much. I love all the grilled flavors!
So easy and I bet so very tasty! I’m going to make these and very soon, too. 🙂
Thanks John! Compared to your last and gorgeous post, these potatoes look sad.
This reminds me of a recipe I make all the time, just potatoes, butter and french onion soup mix. My family loves it. Now I can’t wait to try yours, because the flavors would be wonderful together.. and I know my family would love it too:)
I will have to try the french onion soup. What a good idea.
anything with potatoes gets my vote!!! yum.. c
Mine too! Especially when bacon is involved.
absolutely, esp my home grown bacon! Have a lovely thanksgiving! c
