Love this gorgeous little dressing. It goes very well with the mild lettuce growing in my garden. Plus, vidalias are hard to come by later in the year. Better enjoy them now. Soon they will be gone.
The salad below is Black Seeded Simpson Lettuce, Raspberries, Goat Cheese, Chives, and Sweet Vidalia Onion Dressing.
Sweet Vidalia Onion Dressing
1/2 large vidalia onion
1/4 cup vegetable oil
6 tablespoons white vinegar
8 tablespoons granulated sugar
1-1/2 teaspoons ground dry mustard
1/4 teaspoon garlic powder
1/2 teaspoon poppy seed
1/2 teaspoon salt or salt to taste
1/8 teaspoon ground black pepper or pepper to taste
Slice 1/2 inch off both ends of onion. Pierce onion skin in several places with a sharp knife. Place onion in microwave-proof bowl. Add a tablespoon of water and microwave, covered, on HIGH power until soft, about 3 to 4 minutes. Set aside to cool.
When cooled, peel and place in food processor. Puree until smooth. Add oil, vinegar, sugar, mustard, garlic powder, celery seed, salt and pepper and process until smooth. Chill. Makes about 1 1/2 cups.
I really do like it when I come across a tasty sounding recipe and I’ve already got all of the ingredients. YAY!
I do too! It seems like most of the time I am missing something small but essential like sage or celery seeds. No matter how stocked my pantry seems, I can always need just one more thing. Or two. Or three…
What a gorgeous dressing, i am nuts about onions, i cannot grow enough of them.. this sounds like the dressing for me.. c
