A firm goat cheese made in Extremadura, Spain, Ibores has a milder “goat” flavor than some goat cheeses. The cheese is cream colored with a orange, thin rind.
The cheese is buttery and smooth with a slight spiciness at the end. It would be lovely served on a cheese plate with light red wine, rose wine and lager beer or shaved over salad.
Purchased at Whole Foods, Ibores goes for about $19.99 per pound.
