This recipe celebrates the freshness of my most abundant summer ingredients- tomatoes and cucumbers. About this time of year, I get overrun with them and need a creative way to use them up. This recipe is from Culinaria Russia and it’s origin is Azerbaijan, a country part of the former Soviet Union.
Azerbaijan Salad
- 3 large tomatoes, diced
- 1 cucumber, peeled and diced small
- 3 sweet Italian peppers, diced small (I used one large sweet yellow bell pepper)
- 3 tablespoons olive oil
- Juice of 1 lemon
- 1/2 large sweet onion, diced
- Salt and pepper to taste
Place the tomatoes, cucumber and peppers in a serving dish. Mix together the olive oil, lemon juice and scallions to form a dressing, and season with salt and pepper to taste. Toss the salad with the dressing and serve.
